Saffron
Also written: Poushal
Red threads with a touch of the paler style.
Pushal keeps a short section of the paler style attached to each red stigma. The style carries little colour, so Pushal usually colours a little less, gram for gram, than all-red cuts. It is a good-value option for everyday rice, stews and drinks, especially where saffron is used generously.

Pushal (sometimes written Poushal) includes the red stigma together with a short piece of the lighter, yellow-to-orange style below it. You can see the paler ends among the red threads.
The style adds weight but little colour or aroma, so Pushal usually colours a little less than all-red grades of the same weight. For many everyday dishes this is no drawback: Pushal is an economical way to bring saffron's colour and fragrance to rice, stews and drinks.
If you mainly cook for family meals or use saffron in larger quantities, Pushal is worth considering.
Keep in an airtight, light-proof container in a cool, dry cupboard, away from the stove and strong-smelling spices. Use a dry spoon and close the container promptly.
