Saffron
Also written: Sargol
All-red tips with strong colour for everyday cooking.
Sar Gul, also written Sargol, is made from the red tips of the stigmas only, with the style removed. The threads are shorter and some are broken, which makes no difference once the saffron is ground or steeped. A practical, colourful choice for regular home cooking and for kitchens that use saffron often.

Sar Gul (also written Sargol) means “top of the flower”. Only the red tips of the stigmas are kept and the style is removed, so the saffron is red throughout.
Because the threads are cut shorter, Sar Gul looks less dramatic than Negin, and you will see some broken pieces. Once it is ground and steeped, though, it behaves like any good all-red saffron, giving rice, stews and sweets a deep golden colour.
That makes Sar Gul a sensible grade for cooks who use saffron regularly and care more about the result in the pot than the look of the thread.
Keep in an airtight, light-proof container in a cool, dry cupboard, away from the stove and strong-smelling spices. Use a dry spoon and close the container promptly.
