The saffron range
Every thread comes from the same crocus flower. What changes is how the stigma is trimmed and sorted, and that shapes how the saffron looks, how you use it and what it costs.

Choosing saffron
There is no single best grade, only the one that suits your cooking. These four questions help.
For gifts, or dishes where the threads are on show, choose long all-red threads: Super Negin or Negin. For everyday cooking and infusions, Sar Gul and Pushal give good colour and value.
Super Negin, Negin and Sar Gul are all-red, with the paler style removed. Pushal keeps a little of it attached. Even colour and a fresh, strong aroma are good signs.
A little saffron goes a long way at home. Restaurants, shops and resellers can ask about larger quantities and packing.
Tell us what you are cooking or selling. We will suggest a grade and confirm current availability.
In the kitchen
A few threads, steeped in warm water, bring colour and fragrance to rice, stews, sweets and drinks.

A spoonful of saffron water turns steamed rice into a golden, fragrant centrepiece.

Baked rice with yoghurt and saffron, finished with a crisp golden crust.

From sholeh zard to saffron ice cream, saffron pairs beautifully with milk, sugar and cardamom.

A few threads steeped in hot water make a delicate golden tea.

Questions
They are trade names for how saffron threads are cut and sorted. Super Negin and Negin are long, all-red threads with the style removed; Super Negin is the most strictly sorted. Sar Gul uses only the red tips, so threads are shorter. Pushal keeps a little of the paler style attached. Read our guide to saffron grades.

Keep it in an airtight container, away from light, heat and moisture; a cool, dark cupboard is ideal. Keep it away from strong-smelling spices. See preparing and storing saffron.
Saffron used in normal cooking amounts is a common food ingredient. Large amounts and concentrated supplements are different and can cause side effects. If you are pregnant or take regular medicines, speak to a doctor or pharmacist before using saffron supplements. Read saffron and safety.
